I am new and trying to figure out what I might have with a couple horses. Here's some info on the two horses, please share what you think so that I can better understand what makes for a good horse.

Hi Lug, welcome to the game.

Make sure Fitness and Speed meters are 100% in a race and the others need to be 95 or over percent.

Next start for both, look up the Jockey season stats, try to get one of the top 5 and use 'jockey decides' as the instruction.
